Ashleigh Smith is a Registered Dietitian serving as the Director of Nutrition at ACHE Research Institute Health and Wellness Center. Ashleigh previously worked in clinical and outpatient dietitian roles. In 2021, she presented as the guest speaker for the Taking Off Pounds Sensibly Arkansas State Conference. She holds credentials as a Certified Diabetes Educator. Prior to becoming a dietitian, Ashleigh obtained her Certificate of Baking and Patisserie at Le Cordon Bleu St. Louis. She attended College of the Ozarks, then moved on to complete her Master of Science in Nutrition and Dietetics at Eastern Illinois University. Ashleigh completed her dietetic internship through VA Illiana Healthcare. She will combine her culinary creativity and knowledge of nutrition in her role serving the community.
